I love this as an easy breakfast, you make it the night before then in the morning it’s ready and waiting. Just take the lid off and grab a spoon! Easy to transport if you need to take it to work.

Oats are rich in a type of fibre called Beta-Glucan, this is particularly beneficial for our guts as it increases the viscosity of the meal we’ve eaten it with, helps to bind to bile acids which in turn helps to reduce plasma cholesterol, hence oats being seens as a cholesterol lowering food. The benefit of beta glucans may be even more when eaten “raw or soaked” such as in this overnight oats recipe.

I’m not a fan of overly carb rich morning meals like cereals, porridge with loads of oats (and in many cases extra fruit and sweetened with things like honey), granola or muesli’s simply because they can disrupt our blood sugar first thing. The way round this is to use small amounts of oats (this recipe has 2 tbsp), plus plenty of fibre, protein and fat to help slow the absorption and mitigate potential glucose spikes. This recipe has lots of protein (from collagen, Greek yoghurt and milk) as well as fibre from the oats, ground flax and berries. Ideal!

 

Overnight Collagen Oats with Berries 

Serves 1

100g Greek Yoghurt – try to find a high protein organic one if you can. If dairy free use a good quality soya yoghurt.

120ml of milk (I use Sojade Soya milk) but you can use any type – dairy, almond, soy or coconut would work

1/2 tsp quality vanilla extract, I use a Madagascan vanilla bean paste

2 tablespoons of organic whole oats

1 tablespoon of ground flaxseed

2 tablespoons of collagen powder – I use Motion Nutrition or Vital Proteins, but you could use any unsweetened collagen. Collagen works best as it dissolves completely and doesn’t have a taste

1-2 handfuls of berries. I use frozen berries as they defrost overnight, my favourite is to use frozen blueberries but you could use any of your favourite type

 

  1. In a bowl or tupperware pot combine the yoghurt, milk and vanilla and mix lightly with a spoon.
  2. Add the oats, ground flaxseed and collagen powder and stir to combine.
  3. Then top with your choice of berries. Put the lid on and leave in the fridge overnight. Voila, easy overnight collagen oats with berries.
